- Realize that you’d better either freeze or cook those two split chicken breasts before you go out of town tomorrow.
- Place chicken in a pan and lightly season with kosher salt, thyme, coriander, cracked pepper and a few other things you’re not going to remember till you eat it.
- Drizzle a bit of peanut oil over the chicken and put a few cloves of garlic on top of each.
- Wash and chop into large pieces that giant sweet potato you bought around the same time as the chicken but haven’t used yet.
- Mix that sweet potato with more peanut oil and salt then dump around the chicken.
- Cover the chicken and potatoes with aluminum foil and bake at 350. Remember that it’s best to not put the foil on till the pan is hot. It’s more challenging that way.
- Cut a yellow onion into broad pieces and mix with a granny smith apple in a bowl. A bit more salt, oil and pepper would be nice as well.
- After the chicken and sweet potato have started getting hard and soft, respectively, chuck the onion and apple in on top, again covering with foil and again burning yourself.
- Have no idea how this is going to turn out but suspect you should have boiled the sweet potatoes first.
This recipe—and indeed this haphazard style of cooking—is dedicated to my mom, Lisa, who I miss quite a bit and won’t see till Thanksgiving.
